Outdoor Cooking - The Benefits of Using a Gas Grill
Many, many people cook food outdoors on their Grills. This article is not about "real" smoked barbecue, but about cooking foods on an outdoor grill, which is different than "barbecue." There are basically two types of grills, those that burn gas and those that burn charcoal. There are benefits to using each, and each has their own proponents. I have used both, and I am totally comfortable using either. I think it is important to be comfortable using each, because you never know when you might be at an event and someone asks you to man the grill. You can't say, "I only cook with gas, I don't know how to cook burgers over charcoal." You gotta be able to grab the spatula and cook!
The reason most people cook with gas (propane or natural gas, for ease of writing, I'm just going to use the term gas), is because it is easy to use, cooks clean, and is easy to clean up.
A gas grill is very easy to use:
To get cooking on one, all that is necessary is to turn the gas valve on, turn the dial to the "light" setting and ignite the gas. On most newer gas grill set-ups, the process of ignition is totally simple and foolproof. Just push a button. After the grill is lit, let it heat up on high for about ten minutes or so. Adjust the heat setting to the appropriate temperature for the meat you intend to grill. Put the meat on the grill, cook it, and eat it.
A gas grill cooks very clean:
There is not a lot of little ashes that can blow around and adhere to your meat as there may be with a charcoal fired system. There is not a lot of smoke involved in the fire starting phase as may occur when cooking with charcoal. There is no charcoal fluid taste imparted to the food. Some people say they can detect a taste or order of charcoal starter fluid on the food if cooked on a charcoal grill and the charcoal is started with lighter fluid.

Most people turn the gas on high after they have finished cooking to burn any accumulated grease or sauce residue off of the grill. There is no charcoal ashes to clean out of the grill. Brush the grill with a wire brush, season with a little oil, and it is ready to go for the next cooking.

Grilling really can't get much easier than this. After assembling the grill (which takes only a few minutes), simply plug it in and allow about 10 minutes to fully preheat the surface while you gather your steaks, kebabs, or whatever's to be grilled. On its own, the grill surface stands about 6 inches high; with the pedestal, it stands about 2-1/2 feet high, not counting the domed lid. The pedestal is plenty sturdy for cooking, but the grill still seems a bit top-heavy, so pay special attention if grilling in a high-traffic area or near kids.
